Makes 2 mega sandwiches
INGREDIENTS:
Steak Sandwich:
- Sourdough Bread cut into half inch slices
- 1 pack of Harvey Beef Scotch Fillet Steak
- 4 slices Swiss Cheese
- 4 slices Provolone Cheese
- 1 Brown Onion
- 1 Tomato
- Oak Leaf Lettuce
- Salt + Pepper to taste
- Olive oil
Special Sauce:
- 2 slices Bacon, cut into small squares
- 1 heaped tablespoon Mayonnaise
- 1 teaspoon Horseradish
- 1 teaspoon Worcestershire Sauce
METHOD:
- Bring Harvey Beef Scotch Fillet Steak out to rest to room temperature while preparing the condiments.
- Prepare the special sauce - cut bacon into small pieces and fry until crispy. Drain on paper towel to remove excess grease. Add to a bowl with mayonnaise, horseradish and dash of worcestershire. Stir to combine.
- Prepare caramelised onions - thinly slice 1 large brown onion. Heat olive oil in a pan and cook onions for 10-15 minutes, stirring occasionally. Remove from pan and set aside.
- To cook the perfect steak - season scotch fillet generously with salt and pepper. Add a dash of olive oil to a searing hot pan and cook for 3 minutes on each side. Rest for 5-10 minutes before slicing.
- While steak is resting, slice tomatoes and season with salt.
- Toast bread slices in excess bacon fat and begin assembling the sandwich.
- Spread a generous amount of special sauce on each slice of bread, layer with lettuce, steak slices, 2 pieces each of swiss and provolone cheese, caramelised onion and seasoned tomato.
