Roast Beef Rump

Roast Instructions
Step 1
Pre-heat oven to 200°C.
Step 2
Remove roast from refrigerator and packaging. Sit on a clean plate and allow to come to room temperature for at least 30 minutes or up to an hour.
Step 3
Place on a roasting tray, rub generously with olive oil and season all over with salt and pepper.
Step 4
Place in a preheated oven and roast for 20 minutes.
Step 5
Reduce oven temperature to 180°C and roast for a further 30 - 35 minutes for medium rare. If using a meat thermometer, roast until internal meat temperature reaches 52°C.
Step 6
Remove meat from oven, place on a clean plate and rest for 20 minutes allowing the cooking process to continue and the meat to come to the perfect medium rare (58°C internal meat temperature).

Roast Beef and Beetroot Salad
Slice cooked and cooled Harvey Beef Garlic & Rosemary Marinated Rump into 1.5cm thick slices (or to your liking) and lay out on a large platter. Scatter the remaining ingredients in and around the beef then dress.

Slice left over rare beef thinly and add to fresh baguettes along with…
- Aioli
- Ripe tomato slices
- Leafy greens
- Caramelised onions
And anything else your heart desires.
For gluten and dairy free options, simply use your favourite gluten free roll or wrap and use a DF aioli.

Autumn

Roast Beef with Root Veggie Mash and Jus
Roast your Harvey Beef Rump and serve warm with:
- Mashed parsnip, turnip and pumpkin with generous amounts of butter (or olive oil for DF) and salt.
- A home made gravy using the roasting juices or store bought jus.
- Leafy greens or with your favourite steamed green veggies.

Winter

Loaded Roast Beef Roll Tray
A tray of store bought small (dinner) rolls loaded with thinly sliced roast beef, caramelised onion, grated cheddar and mustard then cooked in the oven to melt the cheese. Simply slice the rolls in half through the centre (keeping them attached if possible). Layer with all the ingredients and cook at 180C for around 20 mins until the rolls are warm, cheese is melted and you can’t resist the smell any longer.
