Butter Basted Scotch Fillet
Step 1
Remove Harvey Beef Scotch Fillet from refrigerator and pack. Place on a clean plate, covered and bring to room temperature (15 - 30 minutes). Season your steaks 40 minutes or more prior to cooking, to allow the salt to melt into the liquid of the steak and act as a brine assisting to tenderise the meat.
Step 2
Add oil and butter to a frying pan, and heat over high heat.
Step 3
For medium rare, sear each side for approximately two minutes. Then tilt the pan and spoon the melted butter over the steak continuously whilst it finishes cooking (a further 2 minutes), turning occasionally to ensure even cooking.
Step 4
Once the steak is cooked to your liking, remove to a plate to rest for approximately 5 mins, lightly covered in foil.
Step 5
Season well and add your steak to any of the dishes below.
Steak Three Ways
Harissa Steak on Hummus with Herbed Grain Salad
- Cook your steak as outlined above.
- After resting, brush each steak with 1-2 Tbsp of quality harissa paste.
- Slice each steak at 1cm intervals on a slight angle.
- Place on a bed of hummus (¼ cup) on each plate.
- Lay each steak on the hummus.
Serve with herbed grain salad:
- 1 cup cooked pearl barley (or freka or quinoa or a mix of grains.)
- ½ cup of chopped coriander and parsley
- Zest and juice of 1 lemon
- 2 Tbsp olive oil
- ½ cup toasted almond, crushed
- 1 tsp Sumac (optional)
- Salt, pepper to taste
Serve with 100g of blanched green beans each serve.

Steak and Onion Sandwich
- Cook your steak perfectly as outlined above.
- Slice, oil and toast the inside of a Turkish roll.
- Lay the base open side up on a baking tray.
- Drizzle with HP sauce.
- Throw on a few sliced red onion and then your choice of cheese for grilling. (We suggest a good cheddar).
- Cook under grill until cheese is melted and golden.
Assemble:
- Fresh tomato slices (don’t forget to season the steak and the tomatoes as you go).
- Mesclun leaves.
- Sirloin Steak, whole or sliced.
- Caramelised onions (home made or shop bought) and extra HP if you wish.
- Spread inside top of Turkish roll with aioli.
Serve with onion rings on the side if desired.

Steak Fried Rice
- Chop the steak to any size you wish.
- Toss some oil in a hot pan.
- Add the steak.
- Add spring onions - approx ¼ cup sliced.
- Garlic and ginger and toss around - approx 2 mins.
- Add frozen veggies - approx half a cup (peas, corn and carrot).
- Add the rice (approx 1 cup) and toss for a further 2 minutes or until warm.
- Crack in your egg and toss to cook it through the rice (2 mins).
- Add sauce ingredients as per the below.
Fried rice sauce:
- 1 Tbsp Tomato sauce
- 1 Tbsp Soy sauce
- 1 tsp sesame oil
- Toss together until the sauces have coated the rice and ingredients and everything is nice and hot.
- Tip into a bowl of enjoy from the pan.
- Optional extras - red chilli - chilli oil - chopped coriander - bacon
