Instructions
Step 1
Add oil to pan
Step 2
Cook sausages (with garlic cloves) approx. 8 mins at medium heat to seal. Remove to a plate.
Step 3
Add veg and more oil / spice mix and toss cooking for 5 mins until softened and aromatic.
Step 4
Add tomatoes and warm stock and simmer 3 mins
Step 5
Slice sausages in half and add back to pan, simmering for 5 mins.
Step 6
Add optional tomato paste x 1 Tbsp for richness.
Step 7
Add lemon zest for depth.
Step 8
Pop in whole cherry tomatoes (optional) to cook with the eggs.
Step 9
Make small divots in the sauce and add eggs then cook on simmer for (8-10 mins) or until the eggs are cooked to your liking.
Step 10
Serve the dish with Greek yoghurt and chopped coriander on the side and warm flatbread to scoop up all the sauces.
