Instructions

Step 1

To make the Tzatziki, slice cucumbers in half and scoop out the seeds. Grate onto a paper towel then squeeze out as much liquid as possible.

Step 2

Combine drained cucumber and remaining tzatziki ingredients in a medium bowl and stir well to combine, taste for seasoning, then refrigerate until ready to use.

Step 4

Prepare Greek salad by combining ingredients in a large bowl and tossing gently, coating with the oil and vinegar. Set aside in the refrigerator until ready to use.

Step 5

Prepare Meatballs - Mix marinade ingredients in a medium size bowl then add meatballs and toss to coat.

Step 6

Heat sandwich press and place meatballs on the press. Spread them out to give space for each meatball to spread a little.

Step 7

Cook for 5 minutes before flipping and continue to cook for a further 5 minutes, or until cooked through.

Step 8

Remove meatballs and juices from sandwich press and cover to keep warm. Set aside.

Step 9

Wipe the sandwich press with a paper towel to remove excess juices. Then give your flatbreads a quick warm up on the hot sandwich press. Approx 30 seconds. Wrap in a tea towel or aluminium foil to keep warm.

Step 10

Serve the meatballs, tzatziki, greek salad and flatbread. We like to start with tzatziki, then meatballs, then greek salad.

COOking Notes
  • For a quicker method, you can purchase tzatziki from your local supermarket.
  • If preparing ahead of time make the tzatziki and Greek salad and store until meatballs are cooked.
  • If you’re in a hurry start with the meatballs and make the tzatziki and Greek salad while they cook.
  • Of course you can also cook the meatballs on a tray on the oven or in a frypan, following pack instructions.
  • GF option: use GF wrap or enjoy a meatball salad).
  • DF option: omit feta and use hummus rather than tzatziki.
