One-Pan Baked Rigatoni with Rosemary and Garlic Beef

Instructions

Step 1

Preheat oven 180 °C

Step 2

Heat a little olive oil in a large oven proof pot over medium high heat. Break the burgers into six pieces each directly into your hot pan and caramelise on each side, approximately 5 minutes, then remove to a plate.

Step 3

To the same pan, add the onion and cook until translucent.

Step 4

Add in the garlic, carrot, mixed Italian herbs and fresh rosemary and cook, stirring, for another minute.

Step 5

Slowly add the tomato passata and a pinch of salt and pepper.

Step 5

Fill the passata jar with water and add to the pot along with rigatoni and spinach. Increase the heat to medium-high and bring the mixture to simmer.

Step 6

Remove from heat. Scatter the top with grated cheese and cover with a lid or tightly with baking paper and then foil.

Step 7

Transfer to the oven, bake for 30 minutes or until pasta is al dente.

Step 8

Turn oven to grill, remove cover and grill cheese until golden and crispy. (2-3 mins)

Step 9

Serve with a mixed green salad and additional parmesan.
