Ingredients:
1 pack Harvey Beef Gourmet Selection Parsley and Thyme Sausages
2 Tbsp extra virgin olive oil
6 Italian style rolls (approximately 20cm each)
1 ½ cups tomato sugo
200g bocconcini, sliced into 4mm thick slices
1 cup basil pesto
60g rocket
To Prepare
Pre-heated oven grill to 200 °C
1. Drizzle oil in pan and cook sausages over medium heat for 12-15 minutes, turning occasionally until cooked through.
To Assemble
1. Split Italian rolls lengthwise through the top of the roll, leaving them attached at the base.
2. Opening the rolls, spoon 1-2 tablespoons of tomato sugo onto the rolls
3. Top with a 3 slices of bocconcini
4. Add a drizzle of pesto
5. Load 1 ½ sausages into each roll
6. Top sausage with a spoon of tomato sugo, bocconcini slices and a drizzle of pesto
7. Place hotdogs under the grill and cook for 3-4 minutes, until cheese is melted.
8. Remove from oven and finish with fresh rocket
