Theo Kalogeracos’ Peppercorn Butterflied Beef Pizza


  • 1 pizza dough stretched and ready to go or use a pre-made base
  • 2 cups of Harvey Beef Peppercorn Marinated Rump cut into thin strips
  • 90g fresh Mozzarella
  • 2 tbsp caramelised onion
  • 2 tbsp roasted red capsicum strips marinated in garlic & parsley
  • Balsamic glaze to drizzle
  • 1 tsp fresh parsley
  • 1 tsp shaved parmesan



  • Pre-heat home oven to 225c fan off
  • Break up the mozzarella on the pizza base, starting at the edges first
  • Evenly spread the caramelised onions and red capsicums over the pizza
  • Place Harvey Beef strips all over the pizza
  • Place pizza in the oven for 5 minutes and then check. If not ready keep an eye on it and give it another 2 minutes
  • When the pizza is ready cut and then sprinkle the parmesan and parsley, then drizzle balsamic glaze over the top
