Rare Roasted Eye Fillet & Crispy Noodle Salad, Chilli, Lime & Soy Dressing
6 x Harvey Beef Eye Fillets
Fresh lime & radish to garnish
For the Salad
½ small red cabbage, finely sliced
1 continental cucumber, finely sliced
1 carrot, finely sliced
3 spring onions, finely sliced
1 bunch coriander
1 bunch mint
2 tomatoes, deseeded & sliced
1 Pkt crispy fried noodles
For the Dressing
2 tbsp soy sauce
4 tbsp fresh lime juice
2 tsp Sambal Olek or crushed chilies
1 tsp sesame oil
- Pre-heat oven to 160c & a frying pan to very hot, then season eye fillet steaks with salt and pepper and sear with a little oil in the pan for approximately 6 minutes each side, or until it reaches 50c internal using a meat thermometer. Set aside to rest and refrigerate if preparing in advance.
- Combine dressing ingredients and salad ingredients in separate bowls.
- Finely slice beef fillet and dress generously with half of the salad dressing, allow to marinate for around 10 minutes before serving.
- Just before serving toss the rest of the dressing through the salad, and garnish with more fresh lime wedges & herbs.
