Pulled Asian Beef & Noodles
1 Harvey Beef Salt and Pepper Roast
4 cloves of garlic, crushed
4 spring onions, finely sliced
4 shallots, finely sliced
3cm piece of ginger, peeled and finely grated
½ cup soy sauce
½ cup plum sauce
½ cup brown sugar
½ cup sweet chilli sauce
½ cup tomato sauce
2 cups beef stock
Salt and pepper, to taste
Noodles of your choice, prepared to the packet instructions
In a glass bowl, combine the sauces, sugar, stock, shallots, onions, ginger and garlic. Make sure are they whisked together well.
Place the beef in the slow cooker and turn on to low. Pour over the sauce mixture. Cook on low overnight or for at least six hours.
When the beef is meltingly tender turn the cooker off and use two forks to pull it apart. Leave the meat in the pan juices and allow it to mix through to make a juicy mix.
Serve with noodles.
