Bun Bo Xao
500g Harvey Beef Scotch Fillet
1 tbs fish sauce
1 clove garlic, crushed
1 stalk lemon grass, finely sliced
250g cooled, cooked glass noodles, refer to packet
½ cucumber, julienned
1 carrot, julienned
1 tbsp peanut oil
1 cup mint
2 tbsp crushed peanuts
½ cup sweet chilli sauce
1 cup bean shoots
2 cups shredded lettuce
Cut the steak into very thin slices and mix with the fish sauce, garlic and lemongrass.
Heat the peanut oil in a frypan or wok and when hot, fry the beef for a few minutes on each side.
Divide the noodles, lettuce and vegetables between four bowls.
Top with the beef, herbs, peanuts and sprinkle with bean shoots and store bought fried shallots.
Serve with sweet chilli sauce and a generous amount of fresh mint.
