GALBI

Galbi preparation is similar to Bulgogi preparation, except the beef tends to be more tender and fattier around the bone. Galbi is made with beef short ribs. It is cut thicker than Bulgogi, therefore the marinating takes longer, and as a result, the flavour is more potent and sweeter. Galbi should be served with fresh greens or soybean paste dip sauce.

Serves: 2 - 3

Ingredients

500g or two pieces of beef short ribs cut 2 square
2 tbsp brown sugar
2 tbsp dark soy sauce
2 tsp sesame oil
2 tsp rice crushed garlic
1 tbsp rice wine
Pinch of black pepper

Method

  • Distribute the sugar evenly on the beef short ribs by sprinkling it on each piece. Allow beef to sit or 10 minutes.
  • In a bowl, mix together the soy sauce, sesame oil, garlic, sake, and black pepper. Put aside.
  • Add the sauce and mix. Allow the beef to marinate for 2 hours before barbecuing.
